Description
Arbois Vin Jaune by Jacques Tissot 62 cl. A Vin Jaune (yellow wine) is a Jura wine made from the Savagnin grape variety, this grape variety so characteristic of white Jura wines. Once vinified, the wine will spend at least 6 years and 3 months in barrels in the Jura cellars specially dedicated to Vin Jaune. The particularity of this barrel aging is that the topping (which consists of maintaining the level of wine in a barrel which tends to empty with the share of the angels) is not carried out. The volume of wine in the barrel is reduced, the wine is in contact with the oxygen in the air and therefore oxidizes. A light veil of yeast develops on the surface of the wine.
