Around 1750 the house of champagne Ruinart acquired ancient chalk pits under the town of Rheims at the time, in order to store its bottles. These piers, eight kilometers of galleries on three levels will prove to be an ideal tool of aging thanks to a thermal stability, a constant moisture level and the absence of vibrations. It is really possible to talk about a Ruinart style, because the preponderance of Chardonnay gives these champagnes a great freshness and a lot of liveliness.
