Le Frimaire November 2011 from Château Bouscassé is an exceptional sweet wine from the Pacherenc du Vic-Bilh Doux AOC appellation, produced from late-harvest Petit Manseng grapes that have been dried on the vine. This wine, created by Alain Brumont, has an enchanting nose of candied fruit, acacia honey, orange blossom and a touch of vanilla. On the palate, it seduces with its perfect balance between creamy sweetness, intense fruitiness and subtle minerality, with notes of dried apricot, caramel and a long, persistent finish. Elegant and complex, it should be served between 8 and 10°C, ideal with foie gras, blue cheeses or a fruit dessert.
