CAP AU SUD CHARDONNAY 2021 DOM F.CARILLON

CAP AU SUD CHARDONNAY 2021 DOM F.CARILLON

Cap au Sud Chardonnay 2021 by François Carillon: Southern Fruit, Burgundy Winemaking

Cap au Sud Chardonnay 2021 is an original white wine created by François Carillon, a producer based in Puligny-Montrachet in Burgundy. After severe spring frosts reduced the 2021 harvest in Burgundy, Carillon sourced Chardonnay grapes from southern France, including the Languedoc, and brought them to his Burgundy cellar for vinification.

The concept combines the fruit ripeness associated with a warmer growing region with the winemaking expertise developed at the estate. The grapes grow on clay-limestone soils, and the wine is made and aged in the cellars at Puligny-Montrachet. According to the producer, the wine spends 11 months in oak barrels, 20% of which are new.

The resulting white wine offers a fruit-driven profile, with exotic-fruit aromas and a fresh finish. The oak ageing contributes texture and complexity, while freshness helps balance the wine’s generous character. Chardonnay is well suited to this approach because it can combine ripe fruit, structure and freshness while reflecting both grape origin and cellar techniques.

Cap au Sud is a versatile choice for the table. Serve it with oysters, shellfish, scallops, grilled fish or fish in a creamy sauce. It can also complement roast poultry and makes an appealing white wine for an aperitif. A serving temperature of around 10–12°C helps reveal its aromas without losing its freshness.

Bottled in a 750 ml format, the 2021 vintage represents an inventive response to a difficult growing season in Burgundy. It allows François Carillon to apply his established winemaking methods to Chardonnay sourced from a different French wine region.

Description

Cap au Sud 2021 by François Carillon: Chardonnay from the Languedoc, Crafted in Burgundy

Cap au Sud Chardonnay 2021 was created by François Carillon, whose estate is based in Puligny-Montrachet, in Burgundy’s Côte de Beaune. The wine has an unusual origin story. Spring frosts severely reduced the 2021 harvest in Burgundy, prompting Carillon to source Chardonnay grapes from southern France. He brought these grapes to his Burgundy cellars and applied the winemaking methods used at his estate.

The grapes come from the Languedoc and grow on clay-limestone soils. This approach brings together the fruit maturity of a southern growing region and the cellar expertise associated with Burgundy. The wine is vinified and aged at the estate in Puligny-Montrachet. The producer specifies 11 months of ageing in oak barrels, including 20% new oak.

The tasting profile is fruit-driven and fresh. The nose is described as lively and fruity, while the palate reveals exotic-fruit flavours and a fresh finish. Barrel ageing contributes texture and complexity, helping shape a fuller mouthfeel without making oak the sole focus of the wine. The result is a distinctive interpretation of Chardonnay, balancing ripe fruit with freshness.

Cap au Sud is suitable for a range of food pairings. It works particularly well with oysters, shellfish, scallops and grilled fish. Fish served with a creamy sauce is another good option, as is roast poultry. It can also be served as an aperitif for guests who enjoy dry white wines with some body. Serve at approximately 10–12°C to allow the aromas to develop while retaining freshness.

The 2021 vintage is classified as Vin de France, rather than a specific Burgundy appellation. Its identity comes from the combination of Languedoc-grown Chardonnay and winemaking in François Carillon’s Burgundy cellar. This makes the wine a distinctive addition to the producer’s range and an example of how a challenging vintage led to a different approach.

Presented in a 750 ml bottle, Cap au Sud 2021 offers an opportunity to explore Chardonnay through the perspective of a Burgundy winemaker working with grapes from southern France.
