AUMANCE by Monsieur Balthazar: a French whisky matured in Sauternes casks

AUMANCE whisky is a creation from the Monsieur Balthazar distillery, which explores the possibilities offered by French grains and ageing in casks that have previously held fine wines. Its name refers to the Aumance, a river near the distillery. This cuvée is distinguished by its maturation, which takes place exclusively in ex-Sauternes casks, selected directly by the distiller from a winegrower in this Bordeaux appellation.

The recipe is based on a blend of organic maize, various barley malts and rye, all grown and sourced locally. After fermenting for at least six days, the distillate is produced by double distillation in Holstein water-bath stills. Ageing in Sauternes casks then helps to develop a distinctive aromatic profile, blending the whisky’s cereal character with the indulgent nuances imparted by the sweet wine. The length of ageing may vary depending on the vintage.

Bottled at 45% ABV in 70 cl bottles, AUMANCE is offered unfiltered. On the nose, it reveals notes of honey, sweets and cherry, accompanied by vanilla, cloves and nougatine. On the palate, it is fresh, fruity and rounded, with hints of dried apricot, nuts and chocolate. The finish evolves towards sweet spices and cereal notes, with a pleasant length.

To appreciate this aromatic profile, enjoy it neat in a tulip glass at room temperature. Allowing it to breathe for a few minutes can help the fruit and pastry notes to fully develop.
