Prosper Maufoux Pinot Noir Référence is a regional red Burgundy made from 100% Pinot Noir. The grapes come from a blend of terroirs across the Côte-d’Or, Saône-et-Loire and Yonne, bringing together different expressions of Burgundy in one cuvée. The aim is to preserve the grape’s distinctive fruit and finesse while offering a balanced wine suited to the table.

The winemaking process begins with grape sorting and destemming, followed by careful transfer into the vats. A period of cold maceration helps encourage aromatic extraction before fermentation. During the vatting period, the winemaking team uses punch-downs or pump-overs according to tasting assessments. The wine is then aged using a combination of oak barrels and stainless-steel vats, as described by the producer. This approach adds complexity and a restrained woody influence while keeping the Pinot Noir character at the forefront.
