Domaine du Cros Lo Sang del Païs – Marcillac Red Wine
Lo Sang del Païs is a distinctive red wine from the Marcillac appellation in the Aveyron region of south-western France. Produced by Domaine du Cros, it is made from 100% Fer Servadou, a traditional local grape variety also known as Mansois.
The vineyards grow on steep hillsides featuring limestone scree and the characteristic red soils known as rougiers. The grapes are harvested by hand, fermented in temperature-controlled stainless-steel vats and aged in stainless steel to preserve the expression of the grape variety.
The wine displays a fresh, fruit-driven profile, with notes of blackcurrant, red berries and peppery spices. Liquorice and hints of mint may emerge on the finish, adding to its distinctive regional character.
Lo Sang del Païs pairs well with grilled meats, lamb, charcuterie and traditional Aveyron specialities such as aligot. It is best enjoyed relatively young and served at around 14°C to highlight its freshness and lively fruit.
Description
Lo Sang del Païs by Domaine du Cros – The Character of Marcillac
Domaine du Cros Lo Sang del Païs is a red wine from Marcillac, an appellation located in the Aveyron department of south-western France. The wine takes its name from the local expression meaning “the blood of the land”, reflecting its close connection with the region and its traditional grape variety.
Made from 100% Fer Servadou, also known locally as Mansois, this wine showcases a grape that plays a central role in the identity of Marcillac reds. The vineyards are planted on steep slopes with varied soils, including limestone scree and red Permian formations known as rougiers. These distinctive red soils are a characteristic feature of the Marcillac valley.
The grapes are harvested by hand. Fermentation takes place in temperature-controlled stainless-steel vats, with techniques such as punching down, pumping over and délestage used to encourage extraction during maceration. The wine is then aged in stainless steel rather than oak barrels, allowing the expression of the grape variety and its fruit to remain at the forefront.
On the nose, Lo Sang del Païs offers aromas of blackcurrant and red berries, complemented by peppery spices. The palate follows with a fresh, direct fruit character, leading to a finish that may evoke liquorice and mint. Its style focuses on freshness, fruit and the distinctive personality of Fer Servadou rather than pronounced oak influence.
At the table, this Marcillac is a natural partner for grilled meats, lamb, cured meats and hearty regional dishes. It works particularly well with aligot, the traditional Aveyron speciality made with potatoes and melted cheese. Local cheeses, including Laguiole, can also provide a satisfying pairing.
For the best expression of its fresh, fruit-led style, the producer recommends enjoying the wine relatively young and serving it at approximately 14°C.
