The AOC Beaujolais covers the southern part of the great Beaujolais wine region while the Beaujolais Villages appellation covers the northern part of this same wine region. A rarer production exists in white wines made from the Chardonnay grape variety. The Beaujolais method of macerating the grapes in vats for 5 to 7 days allows the wine to lose significantly in liveliness and is therefore marketable fairly quickly. Beaujolais Nouveau is the result of this method, marketed on the 3rd Thursday of November as Beaujolais Nouveau or Beaujolais Villages Nouveau.
