Made exclusively from 100 per cent Cacahuazintle maize, an ancient variety grown on the Mexican highlands, it is produced using the traditional nixtamalisation technique, which involves cooking the maize in an alkaline solution to bring out its full aromatic richness. The nose reveals notes of toasted maize, honey, vanilla, cereals and biscuits. On the palate, the texture is generous, silky and indulgent, offering a long finish where caramel, cocoa, dried fruit and sweet spices mingle.
