The Cheval Noir Pauillac 2020 is a Bordeaux red wine from the prestigious Pauillac appellation. Its blend, dominated by Cabernet Sauvignon and complemented by Merlot, Cabernet Franc and Petit Verdot, reveals an intense bouquet of blackcurrant, morello cherry, raspberry, cedar and sweet spices. On the palate, the structure is full-bodied, the tannins are fine and elegant, whilst a lovely freshness extends the lingering finish. This Pauillac is the perfect accompaniment to a rib of beef, a rack of lamb, duck breast or mature cheeses.
Description
For over a century, the Cheval Noir brand has epitomised Bordeaux’s winemaking expertise. With this 2020 Pauillac vintage, the house explores the prestigious terroirs of the Left Bank by selecting grapes from a renowned estate within the appellation. The blend consists of 61 per cent Cabernet Sauvignon and 36 per cent Merlot, complemented by Cabernet Franc and Petit Verdot. The grapes were harvested at perfect ripeness; combined with meticulous winemaking and precise ageing, this has produced a wine that combines concentration, finesse and balance.
The deep garnet colour hints at great intensity. The nose reveals aromas of blackcurrant, morello cherry, raspberry, blackberry and black plum, complemented by notes of cedar, blond tobacco, pepper, vanilla and cocoa. On the palate, the attack is full-bodied and generous. The tannins are firm but perfectly ripe, underpinned by a freshness that lends the wine vigour and length. The black fruit flavours gradually evolve into a lingering, elegant and subtly spicy finish.
Served between 16 and 18 °C after an hour’s decanting, this Pauillac is the perfect accompaniment to a grilled rib of beef, a fillet of venison, a rack of lamb, duck confit or mature hard cheeses. Its ageing potential, estimated at between eight and twelve years, will allow it to develop aromas of leather, forest floor, truffle and cigar box – characteristic of the great wines of Pauillac.
