Château Dompierre Pauillac 2021 is an exceptional red wine, offering a rich, complex aromatic palette with notes of black fruit and wood. Description
Château Dompierre Pauillac 2021 is distinguished by its aromatic richness and harmonious complexity. On the nose, it displays a spectacular flowering of blackcurrant, cedar and wild strawberry, enhancing its floral and "champi" notes. Notes of citrus and spice, mingled with cinnamon and pepper, offer this admirably balanced touch of freshness with a long potential of 1 to 3 years.
The 2021 vintage is a blend of Cabernet Sauvignon, Merlot and Cabernet Franc. The Cabernet Sauvignon brings structure and power, the Merlot gives roundness and fruitiness, and the Cabernet Franc adds complexity and freshness. Each grape variety is vinified separately, ensuring optimum extraction of aromas and tannins.
The Pauillac terroir is ideal for this wine, with its extra-rich clay and pebble soil. The soil provides good drainage, excellent heat retention and the microclimate that boosts the slow ripening of the grapes. The vines benefit from natural irrigation and have a yield of 35 hectolitres per hectare.
The blending of the grapes has achieved a perfect balance between structure, power and quality. The wine has been in barrel for 7 days, allowing it to age gently for 12 months. The start of fermentation was at 14/16°C, then 10/14°C at the end of March, making the quality of the drink clearer. Finalisation began on 16 July 2021 and ends with bottling on 17 September 2021.
For this Château Dompierre 2021 made on 17 September 2021, the winemakers tried to extract as much flavour as possible from each grape, making it easier to make this great Buisson Bourgeois. The approach in the vat was slow and gentle, and the wine benefited from repeated refreshments from 33°C to 19°C, which above all allowed the berries to be sized first, leaving the wine to reduce in perlage and fragrance, replaced by its essence, no drink... The result is a wine with a low sugar content, good power and an evocation that is both original and obvious, supported by its retrogiversity. The wine's beautiful substance has won us over.
