In the heart of the Saumur wine-growing region, Domaine de la Paleine cultivates its vines according to the principles oforganic farming, with a deep respect for the soil, biodiversity and the natural rhythm of the vines. This cuvée, The CAB Bio 2023, is made exclusively from 100% Cabernet Franc, a historic grape variety of the Loire Valley, which thrives particularly well on the limestone terroirs of the Saumur region. It offers a refined aromatic profile, elegant tannins and remarkable freshness.

The estate benefits from the guidance of Stéphane Derenoncourt, an internationally renowned oenological consultant. For over thirty years, he has advised numerous prestigious estates in France and abroad. His philosophy is based on an in-depth knowledge of each plot, sustainable viticulture, limited yields and minimal intervention during winemaking, in order to reveal the identity of each terroir. His approach prioritises balance, finesse, drinkability and the authentic expression of the fruit.

The colour is a deep ruby red with purplish highlights. The nose reveals aromas of black cherry, raspberry, blackcurrant, violet, liquorice, pepper and a slight hint of graphite. On the palate, the attack is supple and fresh. The tannins are fine and silky, underpinned by a lovely structure that lends great elegance. The finish is long, fresh and lingering, with notes of red berries, sweet spices and a delicate minerality.

Served between 15 and 17 °C, this organic Saumur Rouge is the perfect accompaniment to a veal chop, duck breast, grilled meats, roast poultry, pork fillet, mushrooms or mature cheeses.
