GYPSE ORGANIC Dry White Wine by BORIE de MAUREL

Gypse Organic dry White Wine by Borie de Maurel

Gypse by Borie de Maurel – An Organic Chardonnay from Southern France

Gypse by Domaine Borie de Maurel is a dry organic white wine created by Michel Escande in Félines-Minervois, in the Languedoc region of southern France.

Made from 100% Chardonnay, this Vin de France comes from limestone-rich vineyards situated around 300 metres above sea level, on the foothills of the Montagne Noire.

The grapes undergo direct pressing, followed by temperature-controlled fermentation and four months of ageing on fine lees in tanks.

The result is a precise, fresh and mineral-driven Chardonnay.

Its pale golden colour introduces aromas of ripe lemon, blood orange, white flowers and subtle flinty notes.

On the palate, the wine is lively and elegant, combining citrus flavours with a smooth texture and a refreshing saline finish.

Serve between 10 and 12°C alongside seafood, grilled fish, shellfish or white fish in butter sauce.

Gypse offers a distinctive expression of organic Chardonnay from the Languedoc.

Description

Gypse Organic Chardonnay – Michel Escande's Expression of the Montagne Noire Terroir

Gypse by Domaine Borie de Maurel is a distinctive dry organic white wine from the Languedoc region of southern France. Created by Michel Escande, this 100% Chardonnay reflects the mineral character and freshness of vineyards planted on the foothills of the Montagne Noire.

Domaine Borie de Maurel is located in Félines-Minervois, an area renowned for its exceptional Mediterranean vineyards.

Michel Escande established the estate in 1989, developing a reputation for expressive wines that reveal the personality of their terroir.

Although the domaine is particularly associated with powerful Minervois red wines, Gypse demonstrates its ability to produce a refined and elegant white wine.

The Chardonnay vines grow at approximately 300 metres above sea level, on clay-limestone soils.

The altitude and the local environment contribute to balanced grape ripening, helping preserve the acidity that defines the wine's fresh character.

The name Gypse refers to a bright white mineral, chosen to evoke the purity and mineral expression of this cuvée.

The grapes are carefully harvested and directly pressed.

Fermentation takes place under controlled temperatures, followed by four months of ageing on fine lees in tanks.

This approach preserves the Chardonnay's aromatic freshness while adding texture and depth.

Unlike heavily oak-aged Chardonnay wines, Gypse focuses on citrus fruit, floral elegance and mineral precision.

In the glass, it displays a pale yellow colour with luminous reflections.

The nose reveals ripe lemon zest, blood orange and delicate white flowers, complemented by flinty and graphite-like nuances.

On the palate, the attack is crisp and lively.

Citrus flavours develop within a smooth, balanced texture, supported by refreshing acidity.

The finish is clean, persistent and subtly saline, highlighting the wine's distinctive character.

Gypse is classified as Vin de France, rather than Minervois AOP, despite being produced within the Minervois winegrowing area.

Serve between 10 and 12°C to appreciate its aromatic complexity.

It pairs particularly well with shellfish, grilled lobster, sea bass, hake in white butter sauce and delicate poultry dishes.

This organic Chardonnay can be enjoyed young for its freshness or kept for a few years to explore its evolution.

Gypse is a compelling example of how Chardonnay can express the limestone terroirs of southern France with elegance and precision.
