Cuvee Mammouth 2019 100% Orgnic Shiraz by Domaine Le Roc

Cuvee Mammouth 2019 100% Orgnic Shiraz by Domaine Le Roc

Mammouth 2019 – Domaine Le Roc, 100% Syrah Red Wine

Mammouth 2019 is a distinctive organic red wine from south-western France, produced by the Ribes family at Domaine Le Roc near Fronton. Made from 100% Syrah, it is bottled as Vin de France, allowing the estate to showcase this grape outside the traditional blends associated with the Fronton appellation. The grapes come from a stony boulbènes soil and are handled with a traditional winemaking approach, including slow maceration and minimal intervention. The wine is aged for 18 months in a 20-hectolitre wooden vat and 400-litre barrels, then bottled unfiltered.

Its deep colour with violet highlights leads to an expressive bouquet of flowers and spices, followed by dark fruit, pepper and smoky notes. On the palate, Mammouth combines generous texture with freshness and fine, harmonious tannins. Its finish is persistent and spicy, balancing intensity with elegance. This characterful Syrah is an excellent match for grilled beef, duck breast, roasted meats or slow-cooked dishes with a rich, peppery sauce. Serving it at around 16°C and allowing it to breathe before drinking can help reveal its aromatic complexity. A compelling choice for lovers of expressive French Syrah and distinctive wines from the South-West.

Description

Domaine Le Roc Mammouth 2019 – An Unconventional Syrah from South-West France

Mammouth 2019 offers a different perspective on the wines of the Fronton area. While the region is best known for Négrette, the Ribes family at Domaine Le Roc has created this organic cuvée around 100% Syrah. Classified as Vin de France, it focuses on the grape variety and the character of the vineyard rather than a traditional appellation blend.

The grapes grow on stony boulbènes soils and are harvested from a naturally concentrated parcel. Winemaking follows a traditional approach, with gravity-fed vat filling, slow maceration and limited intervention. The wine then spends 18 months ageing in a 20-hectolitre wooden vat and 400-litre barrels. It is bottled unfiltered, preserving its texture and individual character.

In the glass, Mammouth displays a deep red colour with violet tones. The nose opens with floral and spicy aromas, developing into dark fruit, pepper and smoky nuances. The palate is full yet refined, with fine tannins, a fresh backbone and a long, harmonious finish. Rather than relying solely on power, this Syrah combines concentration with balance and aromatic detail.

For food pairing, serve it with grilled beef, duck breast, roast lamb or slow-cooked meat dishes. Peppery sauces, herb-seasoned grills and other richly flavoured dishes are particularly suitable. A short period in a decanter may help the wine open up, and a serving temperature of approximately 16°C will highlight its freshness and aromatic profile.

Mammouth 2019 is an appealing bottle for wine lovers looking beyond familiar appellations. It showcases the Ribes family’s creative approach to winemaking and demonstrates how Syrah can express a distinctive identity in the South-West of France.
