Domaine Dauvissat Père & Fils, one of the jewels of Chablis, offers this Chablis 2023, an organic dry white wine from an exceptional terroir marked by Kimmeridgian soils rich in marine fossils. This Chardonnay offers a subtle nose combining lime, lime blossom and a touch of flint, characteristic of the great Chablis wines. On the palate, it displays a complex aromatic palette: green apple, citrus fruits, fresh butter and a striking minerality, with a long, salty finish.

The Dauvissat estate, managed with passion and rigour for several generations, is renowned for its precise wines, which faithfully reflectthe identity of each plot. Chablis 2023, made from organically grown vines, benefits from optimal exposure and natural drainage, guaranteeing perfectly ripe and concentrated grapes. The 2023 vintage, marked by a hot and dry summer, has produced a wine that is both powerful and balanced, with lively acidity and remarkable mineral structure.

This organic Chablis is the perfect accompaniment to seafood (oysters, scallops), grilled fish or mature goat's cheeses. It should be served at between 10 and 12°C and can be kept for 5 to 10 years to reveal its full complexity.
