The Chablis 1er Cru Côte de Léchet 2023 from Domaine Jean Dauvissat is made exclusively from Chardonnay, Burgundy’s iconic grape variety. Grown on a steep, south-east-facing hillside, this Premier Cru reveals aromas of lemon, green apple, white flowers, white peach and flint. On the palate, freshness, mineral tension and finesse combine with a beautifully silky texture, offering a long, briny finish. This great Chablis is the perfect accompaniment to oysters, shellfish, fine fish, scallops and goat’s cheese.
Description
Domaine Jean Dauvissat cultivates several of the finest terroirs in the Chablis region to the highest standards. The 2023 Côte de Léchet comes from a spectacular hillside overlooking the village of Milly. Facing south-east and with a gradient of nearly 38 per cent, this plot rests on very poor, stony soil which naturally limits yields and promotes exceptional aromatic concentration. The vines, around thirty years old, produce a Chardonnay of great purity, vinified at low temperatures and then aged for a long time on fine lees to preserve all the finesse of the terroir.
The pale yellow colour with silvery highlights heralds a luminous wine. The nose reveals aromas of lemon, grapefruit, Granny Smith apple, white peach and hawthorn blossom, complemented by notes of oyster shell, chalk, flint and a subtle hint of brioche. On the palate, the attack is lively and well-defined. The body is full, perfectly balanced by precise acidity that carries the citrus and white fruit flavours through to a long, salty and intensely mineral finish.
Served between 10 and 12 °C, this Chablis Premier Cru pairs beautifully with oysters, langoustines, scallops, grilled fish, sea bass tartare or a Crottin de Chavignol. With an ageing potential of ten to fifteen years, it will gradually develop notes of honey, hazelnut and white truffle whilst retaining its remarkable structure.
