With his Hautes-Côtes de Beaune Blanc 2023, Pierre-Yves Colin-Morey offers a refined expression of Burgundian Chardonnay. The Au Bout du Monde cuvée captivates with its aromas of citrus, white fruits and flowers, complemented by a hint of hazelnut and a delicate minerality. On the palate, the wine is crisp, fresh and well-balanced, with a mouth-watering finish that invites you to savour it. This characterful white Burgundy pairs well with grilled fish, shellfish, crustaceans or a mature goat’s cheese.
Description
The Hautes-Côtes de Beaune Blanc Au Bout du Monde 2023 showcases the expertise of Pierre-Yves Colin-Morey, a winemaker renowned for his Burgundy white wines, which are characterised by their precise and elegant expression. This cuvée is made from 100 per cent Chardonnay and bears the Bourgogne Hautes-Côtes de Beaune appellation. It derives its character from a high-altitude terroir, situated above the Côte de Beaune, where cooler conditions help to preserve the grapes’ natural acidity.
The plots from which this cuvée is sourced are described as lying at an altitude of between approximately 400 and 450 metres, on clay-limestone soils. These conditions help to shape a white wine that is at once luminous, taut and expressive. On the nose, Au Bout du Monde 2023 reveals notes of green apple, lemon, citrus zest and white flowers. Hints of white-fleshed fruit and hazelnut round off the bouquet.
On the palate, the Chardonnay offers a lively attack and a well-defined structure, supported by acidity that adds depth to the tasting experience. The texture remains elegant, whilst mineral and slightly smoky nuances may emerge with aeration. The finish, persistent and mouth-watering, prolongs the citrus notes and the sensation of freshness.
This Burgundy white wine is a natural choice to accompany scallops, langoustines, grilled fish or roast turbot. It also pairs well with delicate poultry, risotto or certain mature cheeses. Serving at a temperature of 11 to 13 °C will allow you to fully appreciate its balance.
With its expressive Chardonnay and mineral profile, Au Bout du Monde 2023 is aimed at lovers of great Burgundian whites who seek finesse, tension and character.
