Description

Domaine Billaud-Simon Les Vaillons 2021: A Refined Chablis Premier Cru Chardonnay

The Chablis Premier Cru Les Vaillons 2021 from Domaine Billaud-Simon is an elegant expression of Chardonnay from one of the most respected winegrowing areas of northern Burgundy.

Located in the Yonne department, Chablis is internationally renowned for producing dry white wines characterised by freshness, precision and distinctive mineral qualities.

The vineyards benefit from a relatively cool climate, allowing Chardonnay grapes to retain their natural acidity during ripening.

Within this region, the Vaillons Premier Cru occupies a privileged position on the left bank of the Serein River.

Its south and southwest-facing slopes provide favourable sunlight exposure while preserving the freshness associated with Chablis.

The name Vaillons derives from a word referring to a small valley, reflecting the natural shape of the surrounding landscape.

The vineyard soils consist of clay and limestone over a Kimmeridgian geological foundation.

These formations, which contain ancient marine fossils, are among the defining characteristics of the Chablis wine region.

Domaine Billaud-Simon has been established in Chablis since 1815.

Now part of Maison Faiveley, the estate manages approximately 17 hectares of vineyards, including several prestigious Premier Cru and Grand Cru sites.

Its Vaillons holdings cover approximately 2.95 hectares and include parcels associated with the Vaillons, Sécher, Chatains and Roncières climats.

The wine is made entirely from Chardonnay.

Harvesting is carried out by hand, allowing the estate to carefully select grapes before vinification.

Following gentle pneumatic pressing, the must is clarified at a low temperature.

Alcoholic and malolactic fermentations take place primarily in stainless steel tanks.

The wine is generally matured for approximately 14 to 16 months, mainly in stainless steel, with some French oak ageing possible depending on the characteristics of the vintage.

This approach aims to preserve the purity of the fruit while allowing the wine to develop texture and aromatic complexity.

The 2021 vintage was marked by challenging growing conditions in Burgundy, including spring frost and a relatively cool summer.

These conditions contributed to the production of Chardonnay wines with notable freshness and lively acidity.

In the glass, Billaud-Simon Vaillons 2021 displays a bright pale-gold colour.

The bouquet opens with aromas of ripe citrus fruit and white flowers.

Delicate notes of fresh apple, pear and other white-fleshed fruits add complexity.

With aeration, the wine may reveal additional mineral nuances.

On the palate, the opening is lively and precise.

Refreshing acidity provides structure, while the mid-palate develops an attractive sense of richness and balance.

The finish is long and persistent, combining citrus flavours with a refined mineral impression.

This Premier Cru is particularly well suited to seafood.

Fresh oysters, scallops and langoustines highlight its freshness and delicate aromatic character.

It also pairs beautifully with grilled sea bass, turbot or trout.

For richer dishes, consider roast poultry with a light cream sauce or haddock served with delicate herbs.

The recommended serving temperature is 10–12°C.

Under suitable cellar conditions, this wine has an estimated ageing potential of approximately ten years.

Domaine Billaud-Simon Chablis Premier Cru Vaillons 2021 combines the freshness of the 2021 vintage with the depth and elegance expected from a distinguished Chablis Premier Cru.
