Christian Drouin VSOP Pays d’Auge Calvados – Ripe Apple and Gentle Spice
Christian Drouin VSOP is a Calvados from the Pays d’Auge in Normandy, crafted to showcase ripe apple flavours alongside the complexity developed through cask ageing. Under the Pays d’Auge appellation, the cider-based spirit is double-distilled in traditional copper pot stills, a process that helps preserve its aromatic depth.
The VSOP blend is matured in small, previously used casks, including former Bordeaux wine casks. Some eaux-de-vie also spend time in casks that previously held Sherry, Port or Banyuls, bringing added roundness and complexity to the blend.
On the nose, ripe apple and baked apple aromas suggest the character of a French apple tart. Floral notes and gentle spices add further detail. The palate combines fruit, smoothness and elegance, with a persistent finish that keeps the apple character in focus.
Bottled at 40% ABV in a 70 cl format, Christian Drouin VSOP can be enjoyed neat after a meal. It also pairs well with a characterful Normandy cheese such as Livarot. This expression offers a balanced introduction to aged Pays d’Auge Calvados, combining traditional distillation with careful cask selection.
Description
Christian Drouin VSOP Pays d’Auge – Traditional Double Distillation and Cask Maturation
Christian Drouin VSOP is a Normandy Calvados that reflects the traditional production methods of the Pays d’Auge. Made from cider apples, the spirit is double-distilled in copper pot stills, a method that concentrates the cider’s aromas and creates a spirit suited to ageing. The resulting blend is designed to balance ripe fruit character with the additional complexity developed in cask.
Maturation is an important part of this expression. The eaux-de-vie are aged in small, previously used casks, including former Bordeaux wine casks that have been prepared for use with Calvados. The blend also incorporates spirits matured in former Sherry, Port and Banyuls casks. These different cask histories contribute depth and roundness while allowing apple aromas to remain prominent. The VSOP category requires a minimum of four years of wood ageing.
The aromatic profile centres on ripe apple and baked apple, with notes reminiscent of apple tart. Floral nuances and gentle spices add complexity. On the palate, the fruit is supported by a rounded texture and a persistent finish. Oak contributes structure without overwhelming the apple-led character.
Bottled at 40% ABV in a 70 cl format, Christian Drouin VSOP is well suited to neat sipping after a meal. It can also be paired with a strong Normandy cheese such as Livarot, where the richness of the spirit complements the cheese’s intensity.
This Calvados is a good choice for drinkers seeking a mature, layered expression of the Pays d’Auge style, combining traditional double distillation, thoughtful cask selection and the enduring character of Normandy apples.
