Cereal brandy, Houlle juniper is a typical northern brandy
This brandy is obtained by a triple distillation of rye, oats and barley malt. The Persyn distillery continues the tradition with its great classics:
Houlle Juniper Carte Noire 49%
It is a blend of genevers stored between 1 and 6 years in new or old oak barrels.
Houlle Juniper Carte Dorée 40%
It is softened for a little over a year in old oak casks.
But it also innovates by offering juniper finished in Sauternes casks or in Monbazillac casks as well as a brandy very marked by the fresh juniper berry.
