Le Frima Pacory Ice Pear from Ferme des Grimaux is a unique experience in this Normandy setting. It's an ice cider, but it's made with very ripe pears harvested fairly late in the season. These ripe pears are then stored for several months at sub-zero temperatures to allow the fruit's water to freeze and the juices to concentrate.
This technique is also used with Icewein in Germany and Canada.
