Bush de Noël: Belgian Winter Beer from Brasserie Dubuisson
Bush de Noël is a seasonal Belgian beer brewed by Brasserie Dubuisson in Wallonia. First created in 1991 for the festive season, it has become a recognised winter speciality. The recipe combines several malts, including caramel malt, hops selected for this beer, sugar, water and the brewery’s own yeast.
Its deep amber-brown colour leads into a rich, malt-driven aroma. Caramel notes are joined by dried fruit, ripe fruit and hints of nuts. On the palate, the beer is full-bodied and rounded, with a gentle sweetness and restrained bitterness. The caramel character continues into a warming finish, supported by its 12% ABV.
The 75 cl bottle is refermented in the bottle, adding another stage to the beer’s development. Bush de Noël is brewed in limited quantities during the winter season, making it a fitting choice for festive meals and special gatherings. It pairs well with mature cheeses, roasted meats and dark chocolate desserts. Serve cool, allowing the malt and caramel aromas to come through.
Description
Bush de Noël 75 cl: a Rich Belgian Winter Beer from Dubuisson
Bush de Noël is a seasonal Belgian beer brewed by Brasserie Dubuisson in Pipaix, Wallonia. First released in 1991, it was created for the winter holiday period and has since become a well-known festive beer. The brewery, founded in 1769, draws on its experience with strong Belgian ales to produce a beer with pronounced malt character, a full texture and a warming finish.
The recipe uses a blend of malts, including caramel malt, together with hops selected for this beer, sugar, water and Dubuisson’s own yeast. It undergoes top fermentation and is filtered. The 75 cl bottle version is refermented in the bottle, giving the beer an additional stage of development after packaging.
Its deep amber-brown colour leads into aromas of caramel, ripe yellow fruit, dried fruit and nuts, with hints of chocolate and praline. On the palate, Bush de Noël is rounded and full-bodied. A gentle sweetness balances its restrained bitterness, while the 12% ABV contributes a warming finish. The overall profile is rich and malty rather than sharply bitter.
Serve it at around 6–8°C in a suitable beer glass to allow the aromas to develop. It pairs well with roasted meats, slow-cooked dishes, mature cheeses and dark chocolate desserts. The 75 cl bottle is ideal for sharing at a festive meal, where its generous flavour can complement hearty winter food.
Brewed in limited quantities during the winter season, Bush de Noël is a distinctive choice for drinkers who enjoy strong Belgian beers with caramel, fruit and malt notes. It brings together the brewery’s traditional approach and the generous style associated with winter celebrations.
