‘Un Ch’ti Canon? ’ from Les 130 is a dry white wine made from 100% Chardonnay that exemplifies the revival of winegrowing in the Hauts-de-France region. Its golden-yellow colour heralds an elegant bouquet blending fresh butter, toasted bread, candied fruit and a delicate hint of sweet spices. On the palate, this Chardonnay charms with its balance of freshness, roundness and minerality, with a particularly pleasant lemony finish. It pairs perfectly with fish in sauce, poultry in cream sauce, regional cheeses or as a convivial aperitif.
Description
‘Un Ch’ti Canon? ’ is one of the signature wines of the Les 130 collective, an innovative wine-growing project bringing together passionate farmers and winegrowers keen to restore a genuine wine-growing identity to the Hauts-de-France region. Planting on carefully selected terroirs, this vineyard demonstrates that the climate of northern France now allows for the production of highly elegant Chardonnays, combining freshness, finesse and aromatic intensity. The grapes are harvested at peak ripeness to preserve all their richness whilst retaining a lovely natural tension.
The colour is luminous, a golden yellow with brilliant highlights. The nose reveals subtle aromas of fresh butter, toasted bread, candied fruit, ripe pear and white flowers, complemented on aeration by a light hint of gingerbread and citrus. On the palate, the attack is full-bodied and harmonious. The Chardonnay develops a round, delicately buttery texture, underpinned by lovely freshness and a pleasant minerality. The finish, lemony and lingering, brings great elegance.
Served between 10 and 12 °C, this white wine is the perfect accompaniment to a ‘ficelle picarde’ (Picardy-style cheese and bread roll), poultry in cream sauce, white fish in sauce, scallops or a mature Maroilles for a typically regional pairing. Best enjoyed now to fully appreciate its freshness and aromatic character.
