Produced in the Alpes-de-Haute-Provence, Pastaga 45° puts a new spin on the tradition of Marseille pastis with a recipe combining distillates from around forty plants and spices. Aniseed and liquorice form the core of its aromatic profile, whilst an infusion of verbena lends a distinctive herbal freshness. On the nose, notes of lemon, mint and aniseed set the tone for the tasting. On the palate, it reveals a balance between spices, botanicals and a lingering freshness. Best enjoyed diluted with chilled water and a few ice cubes.
Description
Pastaga 45° is a French pastis produced in the heart of the Alpes-de-Haute-Provence. It pays homage to the Marseilles tradition of aniseed-flavoured aperitifs whilst offering a personal interpretation, built around a complex blend of botanicals and spices. The recipe combines distillates from around forty botanicals with an infusion of verbena, liquorice essence, anethole, water and sugar. Verbena is one of the distinctive features of this blend: it lends a herbal freshness and prolongs the aromatic notes, whilst the liquorice is used sparingly to preserve the overall balance.
On the nose, Pastaga is fresh and expressive. The initial impressions evoke lemon, fresh mint and aniseed, accompanied by floral and spicy nuances. As it breathes, peppery and musky notes may emerge, along with a hint of bergamot. The palate is full-bodied and well-balanced. Aniseed blends with flavours of pine and aromatic herbs, whilst verbena and liquorice add depth. The finish, long and lingering, carries through the aromas of fennel, star anise and herbs, with a slightly camphor-like sensation of freshness.
To serve, pour the pastis into a glass, add cold water to the desired strength, then a few ice cubes. Dilution brings out the aniseed aromas and gradually transforms the character of the spirit. Pastaga is the natural choice for aperitifs, particularly when served with olives, Mediterranean dishes or savoury canapés. Its aromatic profile, characterised by verbena and a subtle hint of liquorice, sets it apart from more traditional pastis, which are typically dominated by aniseed and liquorice.
