Brasserie Chromatique, based in Outreau, has created Persephone, an exceptional Imperial Stout aged in Sherry Cream casks to develop rich and complex aromas. On the nose, this 11° beer offers an intense bouquet of chocolate,almond and nougat, while on the palate, it seduces with its roundness and flavours of caramel, candied fruit and noble wood. Its thick, black colour heralds a generous beer, where each sip reveals a new nuance – from mocha to vanilla, with a hint of black cherry.

Ageing in Sherry Cream casks brings a fruity sweetness and aromatic depth typical of great aged stouts.
