Bière à Frometon by Philippe Olivier – A Northern French beer designed for cheese
Bière à Frometon is the result of a collaboration between Philippe Olivier, a renowned cheesemonger from northern France, and Christophe Noyon, master brewer at Brasserie des 2 Caps. Created specifically to accompany cheese, this distinctive beer brings together two regional traditions: artisanal brewing and the selection and ageing of fine cheeses.
Brewed in the Pas-de-Calais, in the Hauts-de-France region, it is made using barley grown on the Belle Dalle farm. Its flavour profile features toasted notes, a subtle salty character and delicate hints of spice. These aromas make it a natural partner for a cheese board, particularly one featuring regional French cheeses and aged varieties.
The idea behind Bière à Frometon is to create a complementary pairing rather than simply serve beer alongside food. Its distinctive character can bring an additional dimension to a tasting, allowing the aromas of the beer and the flavours of the cheeses to interact. It is also a good choice for an aperitif or an informal gathering centred on local produce.
Presented in a 75 cl bottle, this beer has an alcohol content of 7% ABV. Its collaboration between Philippe Olivier and Christophe Noyon reflects a shared commitment to regional craftsmanship and food pairing. The beer was awarded a silver medal at the 2025 France Bière Challenge, adding recognition to this original creation from northern France.
Description
Bière à Frometon: a regional beer created to pair with cheese
Bière à Frometon was developed through a collaboration between Philippe Olivier, a specialist cheesemonger, and Christophe Noyon, master brewer at Brasserie des 2 Caps in northern France. The idea was to create a beer specifically suited to cheese tasting, bringing together two important elements of the Hauts-de-France region’s food culture.
Produced in the Pas-de-Calais, the beer is brewed using barley grown on the Belle Dalle farm. This agricultural connection gives the beer a strong regional identity. Its reported tasting profile includes toasted flavours, a slightly salty impression and subtle spicy notes. These characteristics make it a particularly interesting option for pairing with a selection of regional cheeses, including more mature varieties with pronounced flavours.
Bière à Frometon is designed to complement food rather than simply provide a refreshing drink alongside it. Served with a cheese board, it offers an alternative to more familiar wine pairings and creates an opportunity to explore the relationship between malt-derived flavours and the savoury character of aged cheese. It can also be served as an aperitif or shared at a relaxed gathering featuring local produce.
The beer is presented in a 75 cl bottle and contains 7% alcohol by volume. Its creation reflects the collaboration between Philippe Olivier and Christophe Noyon, combining expertise in cheese selection with local brewing knowledge. The beer received a silver medal at the 2025 France Bière Challenge, recognising this distinctive regional speciality.
For enthusiasts of French craft beer and food pairing, Bière à Frometon offers a clear point of difference: a beer developed with cheese in mind, rooted in the brewing traditions of northern France.
