Ratafia is obtained by blending fresh grape juice of the year with locally produced grape alcohol (A Marc of Burgundy or Marc de Champagne). The Ratafia of Burgundy or Champagne enters the family of Mistelles. Ratafia de Champagne is made with grape juice from Champagne or Coteaux Champenois appellations and then with Marc de Champagne. Ratafia de Bourgogne is made with grape juice from the Burgundy appellation and Marc de Bourgogne.
