Bollinger R.D. 2008 Extra Brut is an iconic vintage Champagne built around a distinctive philosophy: extended ageing in the cellar followed by disgorgement shortly before release. The initials R.D. stand for “Recently Disgorged”. This approach brings together the aromatic complexity developed over years of ageing and the vibrant freshness associated with recent disgorgement.

The 2008 blend consists of 71% Pinot Noir and 29% Chardonnay, sourced from 18 Champagne crus. Aÿ and Verzenay are particularly important for the Pinot Noir, while Le Mesnil-sur-Oger and Cramant contribute Chardonnay. Fermentation takes place entirely in oak barrels, adding depth and structure to the wine. Its Extra Brut dosage is exceptionally low at just 3 grams per litre.

The Champagne displays golden reflections. On the nose, aromas of marzipan, stewed apricot, honey and breadcrumbs are lifted by fresh bergamot. The palate combines citrus with mirabelle plum and vine peach, developing into a complex, lively expression. Fresh hazelnut notes and a saline character shape the long, persistent finish.

Serve at around 12°C to allow the aromas to unfold throughout the tasting. Its structure and aromatic intensity make it a fine match for scallops, refined seafood dishes and mature cheeses.
