Description

Champagne Billecart Salmon Brut Sous Bois, this Champagne is vinified in barrels (sous bois), the 3 grape varieties are part of its composition. The Chardonnay comes from the Premiers et Grands Crus of the Côte des Blancs, the Pinot Noir Premiers and Grands Crus from the Reim Mountain of Aÿ and Mareuil-sur-Aÿ and finally the Pinot Meunier from the Marne Valley. This champagne then remains in the cellar for 6 years before being marketed. This champagne offers a golden yellow dress with bright highlights. The nose is very expressive and evokes dried fruits, fresh citrus fruits and white fruits. The vinification and aging under wood brings buttered notes. On the palate it is of course the wood that expresses through toasted notes of rolls and toffee caramel.
