Old Rum
An old rum is a rum that has spent at least 3 years in wooden barrels
This barrel is generally oak in which another alcohol has already aged, such as Bourbon, cognac, whiskey but also muscats ...... This aging or aging time allows the rum to exchange with the juices wood. This aging time allows the rum to acquire an amber, woody color and tertiary aromas. This method of aging has been strongly influenced by the ancestral practices of Cognac and Armagnac.
