Sherry

Sherry wines or Jerez wines 

These wines are the same appellation but Sherry  is an appellation used by the Anglo-Saxon world while Jerez is used by Spain and Europe. These wines come to us from Andalusia in southern Spain in the city of Jerez de la Frontera. They are white wines made mainly from the grapes varieties :

Palomino Fino, Pedro Ximénez (PX) and Moscatel (Muscat)

They are then classified according to two large families the Finos or the Olorosos.

The Sherry Fino

Are made from the Palomino grape variety, generally titrated (after having been fortified) at 15 or 16 °, this degree of alcohol allows the development of a film of yeast in the barrel which will protect the wine from excessive oxidation. These wines are fresh and perfect for aperitifs accompanied by tapas.

The Sherry Oloroso

Titrate (after being fortified) at 18 °. To this degree, no veil of yeast forms in the barrel and these wines are aged in an oxidative manner. An amber color and powerful aromas develop. The technique of aging in Solera is then practiced on these wines.

The Sherry Manzanilla

Are Fino Type Sherry but produced in the town of Sanlùcar de Barrameda on the Atlantic coast. The cellars benefit from a marine influence with the iodized air which is found in these Finos.
